At 44% ABV, this is no lightweight — but the famous 20ml portion bottle means it is perfectly measured for a post-dinner shot, just as it has been for generations.
The recipe dates back to 1846, when Hubert Underberg created the original herbal bitter in Rheinberg, Germany. Its precise combination of herbs remains a closely guarded family secret, prepared using the traditional Semper Idem process before being matured for several months in Slovenian oak casks. The result is intensely herbal, bitter, warming and remarkably complex for such a tiny bottle.
For Ireland's growing appreciation of classic digestifs, Underberg is a brilliant little addition to the drinks cabinet — and a great one to keep in the fridge or bring out after a big meal. Peel back the distinctive straw-paper wrapping, pour the whole 2cl and enjoy it neat.

Clear, deep golden-brown.
Nose
Aromatic and intensely herbal, with notes of dried botanicals, spices and a subtle earthy sweetness.
Palate
Full, dry and distinctly bitter, with layers of aromatic herbs, liquorice, clove-like spice and medicinal botanicals. A slight natural sweetness appears early before the bitterness builds into a long, warming finish.
Underberg is traditionally enjoyed neat after a meal, straight from the 20ml bottle. For the best expression, the producer recommends serving it around 15–18°C, allowing the herbal aromas and bitterness to fully develop.
You can also chill it if you prefer your digestif colder, but purists will tell you that room temperature gives the little bottle considerably more character.
