Conclave isn’t just a whisky—it’s a ceremony in liquid form. Named after the sacred “lock-room” where cardinals elect the pope (con = with, clave = key), Conclave honors the silent, patient maturation of whisky in sealed barrels.
Born in Schiavon, Veneto, this is Italy’s artisanal take on single malt. Malted barley—both peated and unpeated—is distilled separately in Poli’s traditional bain-marie copper stills. Those spirits rest for five years in medium-toasted, reconditioned white oak barrels to draw soft tannins from the wood. After the quiet aging, the individual barrels are skillfully married to reveal a whisky with a uniquely balanced character.
