Marolo’s Grappa di Amarone is a beautiful fusion of two Italian traditions: the deep, dried-fruit intensity of Amarone and Marolo’s gentle, artisanal distillation in Alba. But this expression goes one step further — it is aged in small oak barrels, allowing the spirit to absorb warmth, spice, and a velvety softness that transforms Amarone’s power into something beautifully rounded. The result is one of Marolo’s most expressive grappas, where fruit, wood, and terroir come together in perfect harmony.
The journey begins in the sun-bathed hills of Valpolicella, where Corvina, Rondinella, and Molinara grapes are naturally dried to create Amarone’s famously concentrated flavours. Once the wine is drawn off, the richly aromatic pomace — full of cherry, raisin, and cocoa notes — is immediately transported to Marolo. There, it is distilled slowly using bain-marie stills, a method renowned for preserving nuance. The young grappa is then laid to rest in oak, gaining notes of vanilla, caramel, toasted spice, and a luxurious amber glow.
This aged expression has found admirers far beyond Piedmont, including in Ireland, where drinkers increasingly seek spirits with depth, heritage, and unmistakable personality.
