Among Marolo’s most revered creations, Dedicata al Padre Aged stands as a heartfelt tribute — a spirit crafted in honour of founder Paolo Marolo’s father, and a celebration of tradition, family, and craftsmanship. Unlike most aged grappas matured solely in oak, this exceptional expression is aged in Acacia wood barrels, a rare and demanding choice that imparts a uniquely luminous character. Acacia contributes delicate sweetness, golden honeyed tones, floral lift, and a gentle spice that frames the purity of Piedmontese pomace.

The pomace comes from the Roero hills, an area known for its fragrant, expressive grapes. Distilled slowly in bain-marie pot stills and matured with great patience, the grappa develops into something both powerful and graceful — a spirit that captures the warmth of the Marolo family and the soul of Roero’s vineyards. Deep, aromatic, and beautifully structured, it offers layers of wildflower honey, acacia blossom, vanilla, herbs, and mellow fruit.
