Dark, smooth and wonderfully moreish.
There is something particularly satisfying about a good Irish stout when it gets the balance right: dark and roasty enough to feel substantial, but light enough that you can happily finish the glass and find yourself reaching for another. Ostara is Galway Bay Brewery's take on the classic Dublin stout, brewed to be complex without becoming heavy and, at 4.5% ABV, very much designed with drinkability in mind. It brings together layers of malt, soft chocolate character and a gentle hop bitterness, creating a stout that feels familiar while still carrying the unmistakable character of an independent Irish brewery.
Rather than simply recreating the familiar dry stout formula, Galway Bay have borrowed a few tricks from their imperial stout brewing and adapted them to a lower-strength beer. The result is a darker beer with considerably more depth than its ABV might suggest. Roasted and chocolate malt flavours build the foundation, bringing coffee, cocoa and toasted grain notes, while the body remains surprisingly light and smooth. Towards the finish, a gentle hop bitterness cuts through the malt and keeps the beer fresh rather than sweet or overly rich.
Pouring deep black with a creamy tan head, Ostara immediately has that classic stout appeal. The aroma is softly roasted, with cocoa, coffee and toasted malt coming through without the sharp roast character that can sometimes dominate darker beers. On the palate, the chocolate side becomes more noticeable, joined by espresso and lightly roasted grain. There is enough malt richness to make the beer satisfying, but the finish remains dry and clean, with a subtle hop zing providing a refreshing contrast.
At 4.5% ABV, Ostara sits in a particularly useful place. It has the darker flavours and comforting character associated with stout, but without the weight or alcohol of an imperial version. That makes it an easy beer to enjoy throughout the evening, whether poured alongside a hearty meal or simply opened when something dark, smooth and malty feels right. The 440ml can is particularly well suited to the beer too, giving enough volume to appreciate the layered character while keeping it in an easy-going format.
There is a distinctly Irish quality to Ostara's approach. Rather than chasing novelty, Galway Bay takes one of the country's most familiar beer styles and gives it a little more depth and personality. The result feels rooted in the tradition of Dublin stout while still having the polish and ambition you would expect from modern Irish craft brewing.
For anyone who normally reaches for stout when the weather turns colder, Ostara is an easy recommendation — but it is by no means limited to winter. The relatively light body, chocolate malt character and dry finish make it just as enjoyable year-round. It is a proper Irish dry stout with enough complexity to reward attention, but more importantly, enough drinkability to simply enjoy.

Galway Bay Brewery began life in 2009 when a group of friends opened The Oslo Bar in Salthill and started brewing beer of their own. More than a decade and several brewery moves later, the independently owned brewery now operates from its home in Oranmore, just outside Galway, producing a broad range of beers from crisp lagers and modern IPAs to barrel-aged releases.
Ostara shows the more traditional side of Galway Bay's brewing, taking inspiration from classic Dublin stout while adding the extra malt complexity and modern brewing experience the brewery has developed over the years. It has remained part of their core range and is now available in the 440ml can format.
