Four Pillars Rare Dry Gin

The Yarra Valley-based distillery uses Australian wheat from New South Wales to make its spirit and combines spices and Mediterranean citrus with a handful of locally-sourced Australian botanicals to create its vibrant, bold character. These botanicals include warming pepperberry from Tasmania and lavender grown in the Yarra Valley.

Nose The juniper is light and sweet, supported by touches of chopped mint, fresh citrus and floral hints.

Palate It opens with candied peels and angelica, with warm cinnamon and white pepper building to a spicy mid palate. Subtle fruity notes throughout.
