About this product

Dried Fruit, Dark Chocolate & Four Distinctive Sherry Casks.
From the tropical island of Negros in the Philippines comes Don Papa Sherry Cask, a distinctive limited-edition rum that takes the brand's characteristically rich style in a deeper, more complex direction. Built around molasses-based rum and finished in four different types of sherry casks, it brings together tropical rum-making traditions and the layered flavours associated with Spain's great fortified wines.

The journey begins with maturation in American oak ex-bourbon barrels, developing a foundation of vanilla, caramel and gentle oak. The rum is then finished in four distinct sherry cask types: Fino, Pedro Ximénez, Cream and Palo Cortado. Each contributes something different, from Fino's drier character to the rich dried-fruit sweetness of Pedro Ximénez, the roundness of Cream sherry and the nutty, spicy complexity of Palo Cortado. The finished blend is bottled unfiltered at 45% ABV.

The result is a full-flavoured, velvety rum with notes of raisins, ripe plums, figs, chocolate and warm spice, balanced by a drier, nutty edge. It is a particularly interesting expression for anyone who enjoys sherry-finished whisky or richer aged spirits, offering a different perspective on what Philippine rum can deliver.

Released as a limited edition, Don Papa Sherry Cask is best approached as a bottle to savour rather than simply another rum for mixing. It makes an excellent after-dinner pour and a distinctive addition to a collection of premium rums.

Why we love it:
The four-cask finish gives Don Papa Sherry Cask a genuine point of difference, combining luscious dried fruit and chocolate with the more savoury, nutty notes of sherry-aged oak. Its richness makes it immediately inviting, while the 45% bottling strength and unfiltered presentation give it a more substantial character. A particularly appealing choice for fans of sherry-cask spirits looking to explore beyond whisky.

Country of origin

Philippines

Colour
Rich amber with reddish highlights.

Nose
Ripe fruit, raisins and dried figs, followed by vanilla, toasted nuts and hints of cocoa.

Palate
Full and velvety, with plums, figs, raisins and dark chocolate supported by caramel, gentle cinnamon and the nutty influence of the sherry casks.

Pour it neat and give it a few minutes in the glass. Don Papa Sherry Cask has plenty of richness to explore, from its dried-fruit sweetness to its darker chocolate and nutty oak notes. A few drops of water can help open up the aromas without losing its full-bodied character.

For a food pairing, try it alongside dark chocolate, roasted almonds, mature cheese or a rich fruitcake. Its sherry influence also makes it a natural companion to a relaxed after-dinner occasion.

Serve neat at room temperature, with a few drops of water if desired.

Easy Home Cocktail – Sherry Cask Old Fashioned

  • 50ml Don Papa Sherry Cask
  • 5ml sugar syrup
  • 2 dashes aromatic bitters
  • Orange peel
  • Ice

Add the rum, sugar syrup and bitters to a mixing glass filled with ice. Stir until well chilled, then strain over a large ice cube in a rocks glass. Express the oils from an orange peel over the drink and use it as the garnish.

The rum's dried-fruit and sherry character does much of the work here, so keep the sugar restrained and let the spirit remain the star.

Don Papa takes its inspiration from Negros Island in the Philippines, a region closely associated with sugarcane cultivation and known by the brand as Sugarlandia. The rum is made from molasses derived from local sugarcane and has developed a distinctive identity built around rich fruit, vanilla and oak. While the core range showcases the house's sweeter, approachable style, the cask-finished collection explores how different woods and wine casks can add new dimensions. Sherry Cask is one of its more elaborate expressions, bringing together four sherry-cask influences in a single blend.
