Cocchi Vermouth Amaro “Dopo Teatro” is one of the most distinctive expressions in the Cocchi collection, sitting beautifully between a traditional Vermouth di Torino and a classic Italian amaro. Its name, which translates as "After the Theatre," recalls a long-standing Piedmontese tradition, when elegant cafés in Turin would serve richly aromatic vermouths after an evening at the opera or theatre instead of dessert. More than a century later, Cocchi has revived that ritual in a bottle that is both wonderfully nostalgic and unmistakably contemporary.
Crafted in Asti by Cocchi, Dopo Teatro begins with quality Italian wines before being infused with an exceptionally complex selection of botanicals. Alongside the classic wormwood that defines every vermouth, the recipe incorporates cinchona bark, gentian, rhubarb, bitter orange peel, alpine herbs, spices, and a generous infusion of cocoa, creating a uniquely rich and bittersweet profile. The result is deeper and more intense than a traditional sweet vermouth, yet more elegant and wine-driven than a typical amaro.
One of its defining characteristics is the generous use of cocoa, which adds remarkable depth without making the wine overly sweet. Combined with warming spices and herbal bitterness, it creates layers of flavour that continue to evolve long after the first sip. In the glass, Dopo Teatro displays a deep mahogany colour with garnet highlights. The nose is wonderfully expressive, opening with aromas of bitter orange, cocoa, dried cherries, liquorice, vanilla, cinnamon, cloves, and aromatic herbs, all wrapped in delicate balsamic freshness.
