West Cork Whiskey with a Rich Atlantic Soul.
Rich, fruity, and beautifully layered, Clonakilty Port Cask showcases the softer, more indulgent side of Irish whiskey. Produced on the rugged Atlantic coast of West Cork, this expression combines Clonakilty's smooth Irish whiskey character with the influence of carefully selected port casks, creating a whiskey where ripe fruit, gentle sweetness, and warming spice come together in perfect harmony.
The journey begins with carefully selected Irish whiskey, which is matured before receiving additional influence from port casks. These richly seasoned barrels impart layers of dark berry fruit, redcurrant, plum, and subtle wine-like sweetness to the spirit, while helping to develop a deeper colour and a more luxurious texture. Rather than overwhelming the whiskey, the port influence works alongside its naturally mellow character, creating an expression that's approachable yet considerably more complex.
Clonakilty's location gives the whiskey an additional sense of place. The distillery's maturation warehouses overlook the Atlantic Ocean, where the coastal environment becomes part of the maturation story. Combined with the character of port-seasoned oak, this creates a distinctly West Cork expression—smooth and fruity at first, followed by layers of vanilla, dried fruit, gentle spice, and oak that gradually emerge across the palate.
This is a particularly enjoyable whiskey for those who like richer Irish expressions. It's excellent as a slow evening pour, whether enjoyed neat or with a few drops of water, but its fruit-forward character also makes it an interesting choice for sophisticated whiskey cocktails. For whiskey lovers in Ireland, Clonakilty Port Cask offers an inviting way to explore the impact that fortified-wine cask maturation can have on Irish whiskey.
Why we love it:
We love Clonakilty Port Cask because the port influence adds a beautiful layer of ripe berry fruit and gentle sweetness without losing the approachable character of Irish whiskey. It's richer and more indulgent than a straightforward bourbon-cask expression, with enough complexity to reward slow sipping while remaining wonderfully easy to enjoy.
Ireland
Colour
Deep golden amber with ruby highlights.
Nose
Ripe red berries, plum, vanilla, dried fruit, sweet oak, and gentle spice.
Palate
Smooth and fruity with notes of raspberry, cherry, plum, caramel, vanilla, and subtle oak spice, finishing long, warming, and gently sweet.
Clonakilty Port Cask is ideal for sipping neat at room temperature, allowing the fruit and spice notes to develop naturally. A few drops of water can open up the aromas, while a large ice cube creates a softer, more relaxed serve. Its rich fruit character also pairs beautifully with dark chocolate, mature cheese, roasted nuts, and desserts featuring berries or caramel.
