Born in 1997, Assajé represents Capichera’s boldest expression of Sardinia’s famed red grape, Carignano, with a touch of Syrah for structure and finesse. It was conceived to elevate red wine to the same status as their groundbreaking whites — and today stands as a powerful, fragrant, and proudly territorial wine.

Harvested from estate-owned vineyards across Gallura and Sulcis, Assajé is crafted to reflect place and tradition. The grapes are hand-picked between late September and early October and undergo around three weeks of spontaneous fermentation in stainless steel, followed by 12 months maturation in French oak barriques and cement, preserving tension while layering in complexity

Intense ruby red with vivid violet edges.

Nose
Ethereal yet vinous—a rich tapestry of black cherries, ripe blueberries, myrtle, spice, eucalyptus and cocoa, leaning into saline freshness.

Palate
Warm and full-bodied with concentrated black fruit, fine-grained tannins, savoury salinity, and a long, structured finish. Despite its power, elegance prevails.

Assajé pairs splendidly with bold, rustic flavours:

Capichera, champion of Sardinian terroir since the late 1970s, built its reputation on expressive Vermentino. In 1997, they turned ambition toward red wine, crafting Assajé from indigenous Carignano blended with Syrah.
