"Manifesto" is a choral project, the result of a collaboration between Tenuta Cocci Grifoni and local farmers, with who it was possible to combine a vision for the future and the temperament trained in experimentation.
To make "Manifesto", a resistant vine, the Johanniter, has been chosen, organically grown and worked on to understand the variety’s potential and the best way to enhance it by adapting vinification to the climate-soil combination. On 12 August 2024, the first harvest has commenced, strictly done by hand.
"Manifesto" is a wine that openly declares the courageous work of the producer, committed to honest viticulture.
The wine is vinified in steel with the skins in contact with the must for 2 weeks at a controlled temperature, resulting in a modern orange wine. Alcoholic fermentation and separation of the skins from the wine was followed by ageing in steel for 5 months.
Sustainable packaging, using 100% post-consumer recycled glass bottle, Nomacorc Ocean stopper, silkscreen printing and absence of capsule.
