Patrick Sullivan Chardonnay is the gateway into the wines of one of Australia's most exciting modern winemakers. While Patrick Sullivan is best known for his highly regarded Gippsland vineyards and intensely site-driven Chardonnays, this entry-level cuvée looks further west to the volcanic landscapes of South Australia's Limestone Coast. Drawing fruit from Mount Gambier, Coonawarra and Wrattonbully, it brings together several distinctive sites to create a Chardonnay that is generous, mineral, precise and remarkably sophisticated.

The Limestone Coast is a fascinating place to grow Chardonnay. Shallow volcanic soils sit over ancient limestone and basalt, forming part of one of the world's great volcanic landscapes, with around 400 dormant volcanoes scattered across the region. Patrick's connection with this landscape goes back to his childhood, and the wine reflects his fascination with the way volcanic soils can shape Chardonnay. The result is not the heavy, buttery Australian Chardonnay of old, but something fresher and more detailed, with bright citrus, ripe stone fruit, subtle oak and a distinctive mineral drive.

In the winery, whole clusters are pressed and the juice is fermented partly in barrique and partly in tank, with approximately 25% new oak. That combination gives the wine texture and gentle toasty complexity while keeping the fruit and acidity firmly in focus.

For wine lovers in Ireland, this is a wonderful opportunity to discover a different side of Australian Chardonnay. It has the generosity and sunshine you expect from Australia, but with the restraint, freshness and mineral tension usually associated with much more expensive cool-climate whites. It's the sort of bottle that can introduce you to a producer whose more serious Gippsland wines are firmly in premium territory.

Elegant aromas of grapefruit, lime and white peach mingle with lemon curd, subtle baking spice and lightly toasted oak. Beneath the fruit sits a distinctive mineral character reminiscent of wet stone and volcanic earth.

Palate
Generous yet finely structured, with ripe stone fruit and citrus carried by vibrant acidity and a pronounced mineral backbone. The oak adds gentle toast and spice without dominating the fruit, while the texture is rounded and supple. The finish is long, fresh and remarkably thirst-quenching, leaving a clean impression of citrus, stone and subtle smoky oak.

The combination of richness, acidity and mineral freshness makes this a remarkably versatile Chardonnay. Pair it with:

Serve at 10–12°C and allow it to breathe for 10–15 minutes after opening. Decanting isn't necessary, although a little time in the glass will allow the mineral, citrus and oak notes to unfold.

Patrick Sullivan has become one of the most distinctive voices in modern Australian Chardonnay. His fascination with the variety began early, developing through vineyard work, viticulture studies and international winemaking experience before he returned to Australia and established himself in Gippsland. In 2013, he settled in Ellinbank and established Tumblestone Farm Vineyard, while also working with a small collection of exceptional vineyard sites across the Baw Baw Shire.

His Gippsland wines are renowned for their purity, tension and expression of volcanic soils, with single-vineyard Chardonnays such as Ada River and Bull Swamp sitting firmly in the premium end of the range. The wines have attracted serious international attention, with Wine Enthusiast awarding previous Gippsland bottlings scores as high as 95–97 points.
