About this product

West Cork Whiskey with Twice the Character.
Smooth, rich, and unmistakably rooted in West Cork, Clonakilty Double Cask takes the approachable character of Irish whiskey and gives it an extra layer of complexity through carefully selected cask maturation. Produced by the family-owned Clonakilty Distillery on Ireland's Atlantic coast, this expression showcases the distillery's ability to combine traditional Irish whiskey craftsmanship with thoughtful maturation to create a spirit that's both easy to enjoy and full of character.

The name says much about what makes this whiskey special. After its initial maturation, the whiskey receives additional time in a second cask, allowing new flavours and textures to develop alongside the original spirit character. This double-cask approach creates greater depth, bringing together sweet vanilla, ripe fruit, toasted oak, and gentle spice while retaining the smoothness that makes Irish whiskey so approachable.

Clonakilty's coastal setting adds another dimension to the story. The distillery's maturation warehouses overlook the Atlantic Ocean, exposing the casks to the distinctive maritime environment of West Cork. Combined with carefully selected oak, this creates a whiskey with a wonderfully balanced personality—sweet and mellow at first, followed by layers of fruit, spice, and oak that linger pleasantly on the finish.

For whiskey lovers in Ireland, Clonakilty Double Cask is an excellent step up from an entry-level Irish whiskey. It has enough richness and complexity to reward those who enjoy sipping whiskey neat, while remaining versatile enough for a relaxed drink over ice or an elevated cocktail. It's a bottle that demonstrates why cask maturation is at the heart of great whiskey-making.

Why we love it:
We love Clonakilty Double Cask because it delivers noticeably more depth while keeping the smooth, approachable character that makes Irish whiskey so enjoyable. The second cask adds layers of fruit, vanilla, spice, and oak without overwhelming the spirit, resulting in a beautifully balanced whiskey that's equally suited to sipping or mixing.

Country of origin

Ireland

Colour
Rich golden amber.

Nose
Ripe orchard fruit, vanilla, honey, toasted oak, and subtle baking spice.

Palate
Smooth and rounded with notes of caramelised fruit, creamy vanilla, sweet malt, toasted oak, and gentle spice, finishing warm, balanced, and pleasantly lingering.

Clonakilty Double Cask is excellent enjoyed neat or with a few drops of water, allowing its layered aromas to open gradually. A large ice cube brings out its softer vanilla and fruit notes, while its rich character also makes it an excellent choice for an Irish Old Fashioned or Whiskey Sour.

Clonakilty Distillery is a family-owned Irish distillery based on the rugged Atlantic coast of West Cork. Founded by the Scully family, the distillery combines traditional Irish whiskey-making techniques with a modern approach to maturation and blending.

One of the distillery's defining features is its maturation warehouses overlooking the Atlantic Ocean. The unique coastal environment, together with carefully selected casks, plays an important role in developing the character of Clonakilty's whiskeys. The Double Cask expression showcases this philosophy by bringing additional layers of flavour and complexity through carefully considered cask maturation.
