The sixth release in Royal Salute's celebrated Polo Collection takes us far from the misty image usually associated with Scotch whisky and straight into the sunshine, colour and unapologetic glamour of Miami. Think golden beaches, Art Deco hotels, palm trees, polo fields and long afternoons where elegance and extravagance go comfortably hand in hand. This is Royal Salute at its most vibrant — a limited-edition 21-year-old Scotch created to capture the energy of one of the world's most glamorous polo destinations.

The whisky itself is just as distinctive as its striking Florida-pink flagon, whose colour takes inspiration from Miami's famous Art Deco architecture. Crafted by Royal Salute Master Blender Sandy Hyslop, the blend is the first in the brand's history to be fully finished in a combination of first-fill bourbon and first-fill rye casks. The bourbon casks bring generous vanilla and coconut character, while the rye casks add a more subtle layer of spice, creating a style that feels luxurious, silky and beautifully contemporary without losing the depth expected from a whisky aged for at least 21 years.

On the nose, ripe pear and honey blossom meet white chocolate, marzipan and soft cinnamon. The palate moves through sweet apricot and pear-drop notes before coconut shavings, milk chocolate, zesty lemon curd and aromatic gingerbread build layer upon layer of flavour. The finish is sweet, silky and complex — the sort of whisky that invites you to slow down and let the details unfold.

For whisky lovers and collectors in Ireland, this is more than a premium bottle for the cabinet. It is a limited-edition statement piece with a genuine story behind it, combining Royal Salute's long-aged Scotch whisky expertise with an unusually modern cask treatment. We love the Miami Polo Edition because Royal Salute has gone properly bold without sacrificing substance. The combination of 21-year-old Scotch, first-fill bourbon and rye cask finishing brings together creamy vanilla, coconut, ripe fruit and elegant spice in a profile that feels both luxurious and refreshingly different. The spectacular pink flagon makes it an exceptional gift or collector's piece, but this isn't just a bottle to admire — there is real complexity in the glass too.

Palate
Sweet apricot and pear-drop sweets lead into coconut shavings and milk chocolate, followed by zesty lemon curd and hints of aromatic gingerbread.

With a whisky this refined, the best place to start is neat, allowing it a few moments in the glass to open up. The creamy vanilla, ripe fruit and gentle spice have plenty to say on their own.

If preferred, add a small splash of still water to soften the texture and reveal more of the aromatic fruit and honeyed notes. A large cube of ice can also work beautifully for a slower, more relaxed serve, particularly if you want to emphasise the whisky's silky character.

This is ultimately a bottle for taking your time with — preferably somewhere comfortable, with no need for anyone to be rushing off to the next chukka.

Easy Home Serve – Miami Sunset Dram

  • 50ml Royal Salute 21 Year Old Miami Polo Edition
  • 1 large cube of clear ice
  • Strip of orange peel

Place the ice in a heavy rocks glass and pour over the whisky. Express the oils from an orange peel gently over the surface, then discard or add the peel as a garnish.

The orange lifts the whisky's fruit and citrus notes without masking its vanilla, coconut and subtle spice — a simple, elegant serve for a whisky that really doesn't need much help.
