Four Pillars Spiced Negroni Gin had a rather more specific mission. Back in 2014, Four Pillars distiller Cameron Mackenzie and bartender Jason Williams set out to create a gin with enough intensity and spice to stand up to the powerful combination of bitter Campari and sweet vermouth.

The result became the first release in the Four Pillars Bartender Series: a 43.8% Australian gin built specifically for the Negroni. The classic Four Pillars botanical foundation is turned up several notches, with extra Tasmanian pepperberry leaf and cinnamon joined by West African grains of paradise, Indonesian cubeb, fresh ginger and blood orange.

This isn't spice for the sake of being spicy. The botanicals are carefully balanced to bring warmth, citrus and peppery complexity while retaining the piney juniper character expected from a serious gin. The higher strength gives it the body to remain present even when mixed with equal parts Campari and sweet vermouth.

For gin lovers in Ireland, this is a particularly exciting bottle for the cocktail cabinet: a proper bartender-led gin with a very specific job, and one it performs exceptionally well.

Why we love it:
Four Pillars Spiced Negroni Gin knows exactly what it wants to be. Bold juniper, blood orange, ginger, cinnamon and peppery spice give it enough weight to cut through bitter and sweet ingredients without losing its own identity. It makes a superb Negroni, but the complexity also gives it plenty of room to shine in a spiced G&T and other cocktails.
