The Pinotage grapes come from bush vines and to achieve the “special reserve” style, the grapes are harvested more ripe than usual for rosé wines. The must is fermented at cool temperature for three weeks to maintain the fresh fruit sweetness in the wine. When the wine has reached the ideal alcohol and sugar level, the fermentation is stopped and thus a wine with perfect fruit and freshness is ensured.
